Introduction 

Honey is a natural sweet substance produced by bees from plant nectar. It is commonly used as a food ingredient and natural sweetener. General Composition of Honey

  • Honey has three kinds of sugar. Fruit sugar fructose (the highest percentage), grape sugar glucose, and ordinary sugar sucrose.

  • Proline is the main amino acid present in honey, and it is a measure of honey ripeness. The proline content in honey should be greater than 200 mg/kg.

  • Trace amounts of vitamins and minerals. A research article mentions that honey contains potassium, calcium, chlorine, sulfur, sodium, silicon, phosphorus, magnesium, iron, copper and manganese. 

  • When it comes to mineral content in different types of honey, research studies mention that the dark types of honey are richer in minerals than the lighter ones.

  • The water content is less than 14%. As mentioned in different studies, the lower the water content, the higher the perceived value of the honey.
