Gluten – a natural component of certain cereals Gluten is a family of storage proteins which are naturally found in a variety of cereals such as wheat, triticale, barley, rye and oats. Gluten proteins – including the well-known representatives “glutenin” and “gliadin” – offer a variety of culinary benefits. With their unique physical properties, they can form an “elastic network” that enables optimal leavening or rising and maintenance of moisture in baked goods. Gluten proteins also give foods a chewy texture and stabilize the shape of the final product. So, it’s no wonder that gluten is a favorite of the food industry – but what about the human body? Gluten proteins are difficult to digest. They contain many proline residues that are poorly broken down by the body’s own enzymes. Special enzyme supplements can help degrading gluten and support gastrointestinal comfort.

Biogena GlutENZYME Formula is an active complex, designed to support gluten digestion. This formula provides the gluten-degrading enzyme Tolerase® G. Tolerase® G (“Aspergillus Niger-Prolyl Endopeptidase”) is a proline-specific endopeptidase that can efficiently break down gluten into small fragments – much more efficiently than conventional DPP-IV enzymes. Tolerase® G is active under low-pH stomach conditions (3.5-5.5) and is resistant to digestion by pepsin. This makes it ideal for use in digestive enzyme preparations. GlutENZYME Formula also provides calcium, which contributes to the normal function of digestive enzymes and vitamin B2 (riboflavin), which supports the mucous membranes.
